For me, a bistro is a magic word. It means a place where everyone feels welcome, and where good food is made and enjoyed. 

I’ve been cooking all my life, in Chile and Finland, learning from mountains, sea, and the boreal forest. I cook with what the land gives me – mushrooms, lake fish, herbs, roots. It’s honest food, approachable.

LOBO is my interpretation of dual heritage, a blend of my two homes – Latin and Nordic.  You’ll eat things you recognize, but in a way you’ve never had them before. 

It’s a window into my memories.
Memories of cooking under the laurel tree with friends and family, fire crackling, the TV playing Colo Colo in the background while nobody really watches. It’s about comfort and discovery, about sharing a table.

I’ve dedicated my life to cooking. My journey took me through kitchens like Farang, Pastor, and Pure Bistro, where I explored flavors from around the world, but my heart always stayed with the honest tastes of home. Working with vegan cuisine at Magu pushed me to think differently about textures, flavors, and combinations, sharpening my creativity and teaching me to make every ingredient shine, even without meat or dairy. That approach now shapes my style.

My career, my travels, my experiments: all woven into flavors that tell a story you can taste, see, and feel. A play with colors and layers, designed to make you experience the dish before the first bite.
